{"created":"2022-01-27T02:44:16.046161+00:00","id":2002965,"links":{},"metadata":{"_buckets":{"deposit":"b7ac187f-2733-4713-9a68-536fe3801838"},"_deposit":{"id":"2002965","owners":[1],"pid":{"revision_id":0,"type":"depid","value":"2002965"},"status":"published"},"_oai":{"id":"oai:u-ryukyu.repo.nii.ac.jp:02002965","sets":["1642837622505:1642837905044:1642837914562","1642838403551:1642838407312"]},"author_link":[],"item_1617186331708":{"attribute_name":"Title","attribute_value_mlt":[{"subitem_1551255647225":"豚副生物の流通と価格形成 : 沖縄県を事例として(農学科)","subitem_1551255648112":"ja"},{"subitem_1551255647225":"Studies on pork variety meats market and prices : Okinawa's case (Department of Agriculture)","subitem_1551255648112":"en"}]},"item_1617186419668":{"attribute_name":"Creator","attribute_type":"creator","attribute_value_mlt":[{"creatorNames":[{"creatorName":"吉田, 茂","creatorNameLang":"ja"}]},{"creatorNames":[{"creatorName":"Yoshida, Shigeru","creatorNameLang":"en"}]}]},"item_1617186476635":{"attribute_name":"Access Rights","attribute_value_mlt":[{"subitem_1522299639480":"open access","subitem_1600958577026":"http://purl.org/coar/access_right/c_abf2"}]},"item_1617186626617":{"attribute_name":"Description","attribute_value_mlt":[{"subitem_description":"本研究においては沖縄県産豚副生物の県内流通と価格形成の特徴を九州地域との比較分析によって明らかにした。1. 沖縄県では豚のと殺後の処理方法が湯はぎ法であるために副生物の質の低下の要因となっている。たとえば, 肺のほとんどが検査の結果廃棄処分されている。又, 原皮についても, ほんのわずかの量が皮として取引される以外は肥料の原料となっているにすぎない。皮はぎ法へのきりかえにより副産物(原皮と副生物)の利用効率を高めると同時により利用価値の高い利用法を検討すべきである。2. 他の地域では豚の大きさにより副生物に価格差をもうけているが, 沖縄県では価格差をもうけていない。この点は今後検討する必要があろう。豚肉は生体の個体別格差によってその品質差がある。副生物にも差は認められる。ところが, 現在の取引はこの個体差とは無関係に1頭当たりの画一的価格が形成されている。せめて, 他の地域で導入している2段階価格設定が望まれる。3. 国内の他の地域では食肉と内臓の消費が沖縄県ほどには一体となっていなかったことから内臓専門業者の発達が容易であったとみられるが, 沖縄県では従来から食肉と副生物はセットで流通(消費)する慣習があったために独立した副生物卸売業者, 小売業者はその存在理由がうすかった。現在でも, 家庭での消費傾向には大きな変化はないが, 食肉取引の規模が拡大し, 食肉加工業も発達しているので, 副生物の需給バランスがくずれている。副生物卸売業者の導入により需給バランス調整機能をもたすようにすべきである。4. 副生物は一旦, 冷凍してしまうと, 価格が1/2∿1/3に低下するので, 副生物を原料とした加工業の開発が望まれる。又, 沖縄県においても他府県と同様に赤物は夏場の需要が大きく, 冬場は需要が低下する。白物は逆に夏場の需要が少なく, 冬場に需要は多い。この需要のアンバランスを年平均化するためには, 一般消費の需要低迷期の需要拡大策を講じることと, 現在でもそのきざしはみえているが, 副生物を原料とした加工製品の開発とその消費拡大が望まれる。5. 沖縄県では地場の旺盛な副生物需要に支えられて, 卸売価格ならびに小売価格ともに他府県より高く形成されている。しかし, 近年, 全国的に副生物の広域流通化が進み, 沖縄県へも近県から副生物が導入されるようになり, 沖縄県産の副生物価格をおし下げる要因となっている。県外品に対抗するためには, 地場産であるという新鮮さに加えて, 各流通段階ごとに消費者の欲求に即したよりよい製品作りを心がけなければならない。","subitem_description_type":"Other"},{"subitem_description":"The objectives of the studies were to analyze and clarify pork variety meats market and prices in Okinawa compared with those in Kyushu. The results obtained from the studies are summarized as follows : 1. In Okinawa, hogs are scalding after slaughtering. The scalding method produces pork variety meats of low quality. For example, almost all of the pork hearts are failed to pass an examination and threw away. A small number of skins are sold for skin use. The greater part of skins are merely used as fertilizer. In other areas, the skinning method is introduced for producing dressed carcass. The skinning method produces good quality skins and variety meats. From the viewpoint of utilizing skins and producing good quality variety meats, the skinning method should be introduced to the Okinawan slaughter houses. 2. There exist quantity and quality differences in variety meats by breed and size of hogs. In some other areas, prices of variety meats are determined by size of the hogs. However, in Okinawa, a uniformed price of variety meats is set no relation with breed and size of the hogs. For producing good quality variety meats and increasing of them, it is necessary to introduce the price differences by size of the hogs in Okinawa. 3. In Okinawa, market and consumption of meat and variety meats are done in the same way. So, there is no necessity to have special wholesalers and retailers for variety meats. On the contrary, in other areas, the consumption of meat and variety meats are not done in the same way as in Okinawa. In those areas, therefore, special wholesalers and retailers are necessary to market them. Increasing in meat production and consumption, and developing of meat processing industry, the balance of demand and supply for variety meats is lost in these days.","subitem_description_type":"Other"},{"subitem_description":"Therefore, it is a must to introduce the variety meats wholesalers in Okinawa to keep the balance of demand and supply of the variety meats. 4 There is unevenness in demand for variety meats by seasons. There is a larger demand for pork liver in summer, but not in winter. On the other hand, there is a larger demand for large and small intestines in winter, but not in summer. To keep the balance of demand throughout the year, we have to increase in demand for pork liver in winter and pork large and small intestines in summer, and also to develope variety meats processing industry further. 5. Being a local big demand for variety meats, the wholesale and retail prices for them in Okinawa are higher than those in other areas. The variety meats market has changed gradually from the local market to the regional and national market. The importation of pork variety meats produced in other areas has increased recently. This importation causes to bring down the price of pork variety meats produced locally.
