内容記述 供試泡盛麹菌(Aspergillus awamori)を蔗糖・ペプトン含有培地で培養を行ない, 得られた菌体の無細胞抽出液についてL-アラニン : α-ケトグルタル酸トランスアミナーゼ活性を調べた結果, 培養24時間目で最も高い活性が得られた。本酵素は不安定であったが, 本酵素をピリドキサールー5'-リン酸(PLP)と2-メルカプトエタノールとともに加温処理(37℃, 30分間)すると安定化した。本酵素は硫酸アンモニウム塩析で失活が起った。本失活酵素はPLP及び2-メルカプトエタノールとともに加温処理すると活性の回復がみられた。また, 本酵素はPLPまたは2-メルカプトエタノール非存在下ではP-クロルマーキュリ安息香酸によって失活をうけた。
