Assay condition for the enzyme was investigated; reaction pH was 5.5 and temparature 45℃. Two peaks of acid invertase activity were obtained by partitial purification from the crude enzyme by Sephadex G-150 and G-200 gel colume chromatography and specific activity of the main active peak was 4.78 fold increase.
