University of the Ryukyus}, month = {Oct}, note = {1.パインアップル果実の冷蔵(5∿7℃)と室蔵(室温)中における成分(減量, 色調, pH, 酸度, Brix, 糖, V.C等)の変化を明らかにし, 生産部面の資料とする目的をもって四季の果実について実験を行なった。2.緑熟程度で採果した各季の果実成分は, 貯蔵中全般的には, 経日的に悪変するが室蔵においては, 特に夏, 秋実では8∿10日以降, 春, 冬実では12∿14日以降の悪変が急であり, 冷蔵では, 夏, 秋実は18日, 春, 冬実では20日以降に急変していくことが明らかとなった。3.罐詰加工原料としての最高貯蔵期間は, 緑熟程度で採果したものは, 室蔵では, 夏, 秋実は7∿10日まで, 春, 冬実10∿12日まで, 冷蔵では, 夏, 秋実18日, 春, 冬実21日までと判断されたが, 完熟に近い果実を採果した場合の貯蔵期間は, 前記の期間より2∿3日短縮することが予想される。4.生果販売用としての最高貯蔵期間は, 緑熟程度で採果したものは, 室蔵で, 夏, 秋実8∿10日, 春, 冬実12∿14日まで, 冷蔵では, 夏, 秋実18∿20日, 春, 冬実21∿23日までが適当と判断されるが, 完熟果を採果した場合は, 前記の期間より2∿3日間短縮することが予想される。5.パインアップル果実の冷蔵効果は, 室蔵に較べて約10日間も品質保持を延長することがわかった。, 1. In this study I experimented changing pattern of weight loss, color, pH, acidity, brix, sugars, vitamin C, etc. of pineapple during cold and room temperature storage. Smaple fruits tested were those of four crops of spring, summer, fall and winter. The purpose of the experiment is to offer an information for the pineapple processing. 2. About green ripe fruits, components of each crop became worse during storage day by day. At room temperature summer and fall fruits, and winter and spring fruits spoiled after 8-10,and 12-14 days, respectively. At cold storage, however, it was found that summer and fall fruits, and winter and spring fruits spolied after 18,and 20 days, respectively. 3. The longest storage days at room temperature of pineapples as canning materials were 7-10 days for summer and fall crops, and 10-12 days for winter and spring. At cold storage, the days for summer and fall crops, and for winter and spring crops were 18 and 21 days, respectively. It is supposed that yellow ripe fruits will spoil befor the days mentioned above, because the tests were done about green ripe fruits. 4. Salable days of fresh green ripe pineapples at room temperature were 8-10 days for summer and fall crops and 12-14 days for winter and spring crops. At cold storage, the days for summer and fall fruits, and for winter and spring furits were 18-20,and 21-23 days, respectively. It is supposed that yellow ripe fruits will spoil before the days mentioned above. 5.
