University of the Ryukyus}, month = {Oct}, note = {食生活の内容を決定する要因は何といっても所得で, その外に供給条件の変化や食習慣や嗜好も無視出来ない。なかでも供給条件の変化は大きく作用すると云われている。筆者はこれまで沖縄における野菜の消費構造, つまり野菜支出における収入ならびに家族人員数要因による影響について2回に亘り考察して来た。つまり沖縄における野菜支出は, 収入要因によってある程度増えるが余り顕著ではなく, また4月と11月という供給条件が全く異る場合にも収入要因は野菜支出にたいした影響を来さない。しかし一方家族人員数要因の方は明かに大きく影響を及ぼし, 供給条件の悪い11月には家族人員数がふえると野菜支出は全般に増えるが, 供給条件のいゝ4月には家族人員数がふえると野菜支出は全般には増えず, 野菜の中でも沢山出回って, しかも安いグループに属する野菜支出だけが増えてその他の野菜支出は増えない。つまり,食習慣的要因が働いて野菜の購入が決って来るものと思われる。その点を次の研究で具体的にしたいと思う。, 1) In the last analysis, the income factor will determine the final quality of the people's dietary life while due consideration should be given to the effect of such other factors as the different movements of supply, the people's individual eating habits, and their individual preferences. The effect of the supply movement factor is said to be especially far-reaching. On two different occasions, the auther has closely examined the effect of vegetables consumption, that is, the co-effect of the income factor and the family size factor on vegetables expenditure. This examination leads to the conclusion : In Okinawa, the income factor has some, but hardly noticeable, effect on the increase of vegetables expenditure. Such effect is also slight even during the month of April when there is the amplest supply of vegetables and during the month of November when there is the shortest supply of vegetables. On the other hand, the family size factor apparently has a considerable effect on the increase of vegetable expenditure. In November, vegetable expenditure on the whole increases as family size increases : the increase in expenditure occurs only with vegetables which are moving most amply at lower prices. These facts seem to present some unique aspects of the Okinawan people's eating habits and preferences, which I will cover in my next report. 2) Moreover, it is understood in the last analysis that the family size factor has a considerable effect on the vegetable expenditure.
