TTC136菌株を香りに関する酵素活性の最も高い優良株として選抜した。TTC136菌株の酵素活性を市販黒麹平均と比較すると、キシラナーゼ活性は2.0倍、フェルラ酸エステラーゼ活性は13.2倍、α-アミラーゼ活性は6.5倍、グルコアミラーゼ活性は1.9倍、酸性プロテアーゼ活性は2.5倍、酸性カルポキシペプチダーゼ活性はほぼ同じ活性を示し、泡盛醸造に関する酵素活性も全体的に酵素活性の高い菌株であることが確認できた。(2) 選抜したTTC136菌株で試験醸造を行った結果、麹のキシラナ-ゼ活性は、ベンチスケールおよびラボスケールが市販種麹と比較して、それぞれ4.3倍および3.8倍の高い値であった。フェルラ酸エステラーゼ活性についても、ベンチスケールおよびラボスケールが市販種麹より高く、それぞれ14.2倍および5.6倍であった。これにより、選抜したTTC136菌株は、ドラム型自動製麹装置を使用し、原料米30kgにスケールアップしてもバニリン生成に関与する酵素活性が低下することなく製麹できることがわかった。(3) もろみ中のフェルラ酸含有量は、ベンチスケールで発酵15日目に15.8ppmで市販種麹の7.2倍、ラボスケールの含有量は発酵15日目に7.1ppmで市販種麹の3.2倍であった。市販種麹のフェルラ酸含有量は発酵日数が経過しても大きな変化はなく、発酵15日目で2.2ppmであった。ベンチスケールのフェルラ酸含有量が高いのは、TTC136菌株の特徴であるフェルラ酸エステラーゼ活性が大きく影響していることが示唆された。フェルラ酸含有量の高いもろみを蒸留することで、もろみ中の酸や蒸留の熱により、フェルラ酸が4-VGに変化して泡盛に移行することが期待される。(4) 蒸留液の4-VG含有量は、ベンチスケールで2.9ppmと最も高く、市販種麹の約2.2倍、ラボスケールも比較的高い値を示し1.9ppmで市販種麹の1.5倍であった。これらの結果から、TTC136菌株を使用して泡盛醸造を行うと、蒸留液中の4-VG量の増加が確認され、4-VGは熱成させることによりバニリンへの変化が期待できる。よって、TTC136菌株は、泡盛古酒用黒麹菌としての利用が十分可能であると考えた。","subitem_description_type":"Other"},{"subitem_description":"論文","subitem_description_type":"Other"}]},"item_1617186643794":{"attribute_name":"Publisher","attribute_value_mlt":[{"subitem_1522300295150":"ja","subitem_1522300316516":"南方資源利用技術研究会"},{"subitem_1522300295150":"en","subitem_1522300316516":"The
