The tubers were macerated with 0.2% pectinase by incubating at 40\u2103 for 4 to 5 hr. The degree of maceration was dependent on the enzyme concentration and incubation time. Reducing sugar did not increase when the macerated mashes were incubated with \u03b1-amylase and glucoamylase at 40\u2103. The macerated mashes were liquefied with \u03b1-amylase at pH 5.5 and 80\u2103 for 10min. In the presence of glucoamylase the liquefied mashes were saccharified at pH 4.5 and 40\u2103 for 4hr. Ethanol fermention of the saccharified mashes was carried out with baker\u0027s yeast at pH 4.5 and 30\u2103.
